At Dos Maderas, every bottle of Rum tells a story, and our newest release, Atlantic, is no exception. With a golden hue that mirrors the sunsets over the Atlantic Ocean (hence the name), this impeccably balanced blend captures the bold spirit of adventure – and audacious alchemy.
Vibrant notes of spice, caramel, and toasted nuts transport you to the lush landscapes of its transatlantic journey. Born in the Caribbean, raised in the forests of Guyana and on the beaches of Barbados, Atlantic completes its journey in the sun-drenched, flamenco-filled cellars of Jerez in Andalucía, Spain.

Meet Dos Maderas Atlantic
Atlantic isn’t just a name; it’s a call to set sail on an adventure that spans oceans and cultures. Like a ship charting new waters, this premium aged Rum captures the essence of exploration and discovery. Inspired by the vast ocean that embraces our bodega on the western shores of Jerez de la Frontera, Atlantic navigates uncharted territory with a daring blend of five-year ex-Bourbon oak-aged Rums from Barbados and Guyana. Atlantic gains a hint of decadence, thanks to its finishing in very old Pedro Ximénez Sherry casks. The result? A Rum that anchors the bold spirit of adventure with the smooth, rich notes of Sherry cask magic – a voyage in every sip.
Distinguishing Dos Maderas Atlantic: Sherry Cask Rum
We are entering a bold new chapter in Sherry cask-aged Rum. Atlantic may be the youngest in our family, but it’s certainly not the least delicious. A Rum aged in the Caribbean and finished in Spain is indeed a rarity. Not entirely a ‘Spanish Aged Rum,’ but rather a ‘Sherry cask-finished Rum in Spain,’ all Dos Maderas Rums benefit from a unique aging process where Sherry casks impart their complex qualities to the spirit. Caribbean Rums, initially aged in ex-Bourbon oak, spend their final years maturing in very old and prestigious Sherry casks.
Differences between Dos Maderas Atlantic and other Dos Maderas Rums
The secret to our Sherry cask finishing is our proprietary use of VOS Palo Cortado and VOS PX Sherry ‘botas.’ Palo Cortado contributes flavors of dried apricots, hazelnut, honey, pepper, roast coffee, baking spices, and light toffee. PX brings richer notes of figs, dates, raisins, treacle, chocolate, tobacco, and leather. Our 5+3 spends three years finishing in old Palo Cortado casks. Meanwhile, 5+5 and Selección are finished in both Palo Cortado and PX casks, while Luxus enjoys a long, solo journey of five years in PX casks. Flavor profile and tasting notes
Call it audacious alchemy, if you will. Finishing in PX Sherry casks offers an amber or auburn gold liquid reminiscent of late-horizon sunsets on the ocean. It’s an aromatic adventure laced with caramel, spices, toasted nuts, a medley of dried fruits – and the guarantee of a smooth sailing finish. It’s a sensory odyssey guided by hints of oak, raisin… and, of course, adventure.
How is Dos Maderas Atlantic aged?
Atlantic begins its journey split between Barbados and Guyana, two distinct Caribbean locations. Barbados is often considered the home of Rum, known for its sandy beaches and laid-back island life. Guyana, nestled around the famous Demerara River, is rich in lush vegetation, waterfalls, and wildlife. We source and blend Rums from these regions, aging them for five years in ex-Bourbon oak casks. These Rums then traverse the ocean to our Sherry bodega, Williams & Humbert, located in the heart of Sherry country: Jerez de la Frontera in southern Spain.
The Dos Maderas Family of Rums
With roots stretching back to 1877, Bodegas Williams & Humbert has been a hallmark of tradition in Jerez, and the Medina family has maintained this family-run business since purchasing the company in the 1990s.
Although the bodega had always produced Brandy de Jerez, it wasn’t until 1945 that the Gran Duque de Alba label was developed, inspired by a connection to the Duque de Alba line. Bodegas Williams & Humbert’s agent in Madrid was a close friend of Jacobo Fitz-James Stuart y Falcó, the 17th Duke of Alba (father of the Duchess of Alba). Before the imminent launch of the new and exclusive brandy, the agent asked the Duke if he could name the liquor after him. After tasting it, the aristocrat was pleasantly impressed and suggested that it would be more fitting to name such a noble product after the 3rd Grand Duke of Alba from the 16th century, Fernando Álvarez de Toledo y Pimentel, who had greatly strengthened the House of Alba and was an important historical figure.
In addition to creating several Sherry labels over the decades – including Dry Sack, Don Zoilo, and the VOS and VORS lines – Bodegas Williams & Humbert entered the Rum scene in 2006 with the release of their first Dos Maderas Sherry cask-finished Rum, expanding the portfolio from there. Our Selección 10-year Rum, released in late 2017, was the last addition before Atlantic, our first new label in seven years.
Aged to perfection
Here at Dos Maderas, we seek and find Rum perfection by maturing excellent Caribbean based Rums in our award-winning Sherry casks. The marriage of decadence of aged Rums with its toasted coconut, caramel, coffee, vanillin and sweet notes finds easy compatibility with Sherry cask finishing.
Unique aging process: Pedro Ximenez Sherry casks
PX (Pedro Ximénez) casks are very old oak barrels that have previously been used to age Pedro Ximénez Sherry. Be sure to locate a bottle of Williams & Humbert Don Guido VOS PX Sherry to taste an excellent example of this style of wine on its own. It’s a decadent dessert of PX grapes that have been dried out in the sun before fermentation, fortification, and aging. One of the most sought out dessert wines on the planet, PX exhibits glorious long tastes and aromas of roast coffee, treacle, dates, figs, molasses, baking spices, tobacco, leather, and chocolate. Our Don Guido is sourced from a 20-year-old solera and displays decadent grace with a longer maturation time.
3 Summer Cocktails with Dos Maderas Atlantic
Atlantic loves Rum cocktails and is highly adaptable in nearly all classic recipes. Try it in a Daiquiri, Piña Colada, Rum Runner, Negroni or Old-Fashioned to get to know its range. Otherwise, here are a few easy to build refreshing highballs to give a chance.
Atlantic Berry Breeze
Feeling spring-summer vibes? Try building directly in your highball glass: the Atlantic Berry Breeze Tonic.
- 2 oz. Dos Maderas Atlantic
- 4 oz. Wild Berry Tonic
- 6-8 Fresh Raspberries
- Ice Cubes
- Squeeze a lime wedge and discard.
- Fill with ice and garnish with seasonal berries and mint sprigs.
Want to add that extra flourish to your presentation? Freeze berries into 1″ x 1″ cubes the night before and use your berry ice in lieu of regular cubes.
Atlantic Apple Splash
Everyone loves a late summer cocktail and apples are available all season long so you don’t need to wait for the fall if you’re craving them. Building off of the classic Stone Fence, try our Atlantic Apple Splash.
- 2 oz. Dos Maderas Atlantic
- 4 oz. Pressed apple juice or cider
- Splash of club soda
- Squeeze a lime wedge and discard.
- Fill with ice, garnish with a slice of apple, and some freshly grated nutmeg.
Atlantic Pineapple Wave
If you don’t think Rum and pineapple go together, we’re not sure how to respond! The Atlantic Pineapple Wave harnesses pure tropical summer vibes and there’s no need to overthink it. Keep it simple and lighten the mood with a pineapple and coconut water Caribeño highball.
- 1.5 oz. DM Atlantic
- 2 oz. Pineapple juice
- 2 oz. Coconut water
- Squeeze a lime wedge and discard.
- Fill with ice, garnish with a pineapple slice, and add fresh mint if available.

Every good Rum drink enjoys a good snack pairing. Best not to indulge on an empty stomach. Here are a few easy suggestions to launch your next get-together, game night, or just to enjoy while staying home and watching a show.
Food suggestion 1: Fruit and Cheese Bites
Packing a picnic for the beach or park? Try prepping these simple fruit and cheese bites and bring a pre-batched bottle of Atlantic Rum and iced tea with lemon.
- Grapes and brie with your favorite crackers and a drizzle of honey.
- Apples and manchego on melba toast or dried baguettes slices with a drizzle of honey.
- Watermelon cubed with feta and a splash of Sherry vinegar mixed in a bowl.
